Toru has been running the kitchen at riverstation, Bristol since 2011. riverstation is a 120-cover independent restaurant with a 17-year history. The restaurant has a daily changing menu and everything is made in-house from the bread to the ice cream, using seasonal ingredients from a brigade of trusted local suppliers.
Toru’s experience in the UK includes Hibiscus, Ludlow, (Michelin 2 star, headed by Chef Patron, Claude Bosi), Simpsons, Birmingham, (Michelin 1 star, headed by Andreas Antona), and with the desire to learn about traditional English cuisine, Hundred House, Norton. Influences from all these kitchens are evident in the menus at riverstation.

Toru trained at Hattori School of Food and Nutrition in Tokyo, Japan, specialising in French and Italian cuisine. After graduating he worked for 10 years at one of Tokyo’s top French restaurants, ‘Madame Toki’, this also enabled him to work at their sister restaurant, the Italian, ‘La Columba’. Toru also spent some particularly formative time working at a modern Lebanese restaurant in Sydney before moving to the UK in 2004.
