I am Head Chef at The Flying Horse Inn, in Boughton Aluph.  I began here in July 2013 as my first Head Chef job and looking to achieve rosettes. This has been a long process but we are looking to hold 2 AA rosettes by the end of 2014.

I started at The Wife of Bath as a Commis and within a year moved through the ranks and found myself as Pastry Chef. This is where I discovered my love for pastry and made a name for myself through my desserts. I started using modern techniques and introduced some molecular gastronomy which was all self taught. After this I joined the brigade at Stoke Park as Sous Pastry Chef under head chef Chris Wheeler holding 3 AA rosettes. At Stoke Park I honed my skills that I had learnt myself. I also gained knowledge and technical skills working with other chefs that had experience in 3 Michelin Star kitchens.

I have Michelin goals in the future. I like to know the science behind the food and my latest experiment has been home-made edible lemon and lime flavoured cellophane which I use to wrap petite fours.
