I am currently the Head Pastry Chef at ME Hotel on The Strand in London. I oversee a team of ten chefs in the Pastry Department, we are responsible for all patisserie within the hotel. There are three restaurants, STK London, Cucina Asellina and Radio Rooftop, we also caterer for private events up to 300 as well as afternoon tea in the Marconi Lounge. I am responsible for menu development in all the food and beverage outlets within the hotel.

Prior to this role I was the Head Pastry Chef at Yauatcha London part of the Hakkasan group. Yauatcha is a One Michelin star Chinese Dim Sum Tea House with Patisserie Retail. Items included Petit Gateaux, Macarons & Pralines through restaurant sales & retail. I had a team of 10 chefs for production and service.

Before this role I was the Head Pastry Chef at Dinner by Heston Blummenta  at the Mandarin Oriental Hotel, Knightsbridge. Dinner was recently awarded Top 5 restaurants in the world at the National Restaurant Awards and also holds two Michelin stars. Here I had a brigade of 12 chefs and was part of the opening team.

I have also worked at Mandarin Oriental Hotel & The Ritz Hotel, both in London as well as working in Sydney Australia several years ago.
