Chef Olly Rouse joined Lainston House Hotel in late 2013. Olly oversees the entire food offer at Lainston House. Olly focuses on keeping an approachable manner to his food style. He has built a reputation for innovation and pushing the boundries with his food through the wealth of experience he has gained at Michelin starred properties such as Coworth Park and The Vineyard at Stockcross – but his vision at Lainston is much more refreshing. A belief in nature, health and fun are considerations that set the ball rolling in the interpretation of the dishes he creates.

Olly began his career when he was just 13 at Les Bouviers Restaurant in Dorset. He worked up through the ranks and moved properties to suffice his desire for more knowledge. He moved to London to work in his first Michelin starred restaurant – Petrus. Olly moved out of the city to The Vineyard at Stockcross where he was the Sous Chef. During that time the restaurant gained their second Michelin star. Olly left to set up two successful companies to hone a unique food offering. Olly was offered the chance to open a new property in Ascot with The Dorchester Collection to run their fine dining restaurant. The restaurant was a terrific success from the day it opened, and gained a Michelin star in its first year of trading.
