Matthew embarked on his career in 1999, having first undertaken a degree in Hospitality Management. His early roles saw him working at several pubs, a vegetarian cafe and even a supermarket staff canteen before he set his sights on fine dining.

It was under the tutelage of Steve Crane at Ockendon Manor, whose brigade he joined as a Chef de Partie in 2004, that he got his first opportunity to work in a Michelin-starred kitchen. A year later, Matthew won the coveted Roux Scholarship – an accolade that put him in good stead to take on the position of Head Chef at The Goose in Britwell Salome, Oxfordshire, for which he won a Michelin star in 2008. The following year he repeated this success at The Montagu Arms in Beaulieu in the heart of the New Forest, and has retained the ranking ever since.
