Matthew Bird

Matthew trained at st Austell college where he carried out a BTEC level 3 qualification in hospitality and my NVQ level 2 in professional cookery. After completing this qualification he undertook a Concorde trainee management course where he trained in all aspects of the hotel trade.

Matthew’s first placement was working at the Runneymede hotel in Surrey which is a 4 star establishment where he trained in the kitchens, he then moved to Twickenham and trained in the restaurant of the 4* Richmond Gate Hotel.  From here he moved to Cobham in Surrey where he trained in conference and banqueting at the Woodlands park hotel another 4* hotel.

Matthew then moved to Hook in Hampshire training in a cocktail bar at the Basingstoke Country Hotel and finally moving to Cambridge to train on reception at the Gonville hotel.

Once his training was complete, he was offered a position at the Gonville hotel as food and beverage manager where I stayed for 12 months, moving back to Woodlands park hotel as assistant conference and banqueting manager for 10 months.

Matthew then moved to Ipswich where he took a position of assistant restaurant manager at Le Talbooth fine dining restaurant on the boarder of Essex and Suffolk. He now works as a full time college lecturer at Cornwall College St Austell training students in all aspects of front of house.
