I’m passionate about inspiring others to source, prepare and eat great food. My experience and knowledge has been gleaned over years of eating, researching, travelling and working as a cook.

After training at Leith’s School of Food and Wine in London I spent a couple of years in America and Australia before joining an Italian yacht as the chef. My love of Mediterranean cooking stems from the years I spent onboard. The boat was based in Italy, Spain and France for long periods and then we spent two years sailing around the world.

I have a close connection with Spain having studied Spanish and Catalan at university and lived in Barcelona for a while. My work as a restaurant consultant for a small chain of boutique hotels gave me the opportunity to travel widely and research my two Spanish cookbooks : The Food of Northern Spain (Pavillion 2005), The Real Taste of Spain (Pavillion 2007).

Nowadays I’m determined, through my teaching and writing, to introduce people to the delicious benefits of eating wholefoods such as grains and pulses, so integral to the Mediterranean diet. My latest book Pulse reflects my “more hip than hippi” take on the subject. Consuming less, but better quality, meat is something I advocate too.

I teach at my own school Plum Cooking in Bristol, at The Bertinet Kitchen in Bath and also at Divertimenti, Leith’s and Borough Market in London.

I approach my teaching, consultancy and writing with great energy and enthusiasm; I aim to inspire as much as inform.
