Trained as a patissier through some of the best hotels in London, Royal Garden, Dorchester, Selsdon Park, Inn on the Park, Park Towers,  ending up as sous chef & patissier at Quaglino’s, St James’s, London, and patissier at Skyline Hotel at Heathrow.

Opened and ran my own restaurant in Teddington, Middlesex as well as a successful outside catering company. Then moved to Cornwall to take up a full time teaching post at Cornwall College, specialising in patisserie and confectionery.

Now subject leader in level 3 patisserie courses. My background as a restaurateur also led me into setting up and running several catering businesses in Cornwall, including an American Diner, a Wine Bar/Bistro and a live music pub.
