Dale McIntosh – Merchants Manor

Dale McIntosh

Born in Kent, but now resides in Mid-Cornwall, not far from the port of Falmouth, Dale has worked at numerous restaurants and hotels in both his home county and Cornwall respectively.

Dale is the Head Chef at The Merchants Manor (formerly the Greenlawns Hotel), Falmouth, after a 3 month spell at The Riverbank, Truro and The Norway Inn.

Dale started at The Riverbank hoping to put it on the culinary map before he was offered at role at The Norway Inn that he couldn’t turn down. Prior to this he had a successful year at Bustophers Bar Bistro, a year that saw Dale (and Bustophers) go from strength to strength. Not only had Dale and his team secured a third successive year at the Cornish Challenge final, but also retained Bustophers AA rossette with impressive comments, receive a highly commended verdict in the Michelin Guide, had numerous great write-ups in regional newspapers and magazines, was a featured chef at the Cornish Food & Drink festival (again), and came joint second in The Food Magazines’ South West – Best Local Chef Of The Year, as voted for by thousands of readers.

Prior to joining Bustophers, Dale had an outstanding 2 years at The Pandora Inn, where he and his team won the Cornish Challenge and helped steer the pub to win Cornwall Tourisms’ Pub of the Year 2010. Dale left just weeks prior to the fire that gutted the famous pub, and was glad to see it return to its former glory last year.

Dale is a proud father of 3 and as anyone whos ever met him, a life long Liverpool FC supporter and keen golfer. It also goes without saying that along with most chefs a healthy interest in all aspects of food, produce and cooking.
