Quality Standard Beef and Lamb – A Quick Guide for Chefs

The Quality Standard Mark Scheme for beef and lamb has been developed to guarantee the eating quality and product consistency of beef and lamb for chefs.

The scheme is the only product integrity and quality assurance scheme in the UK that ensures beef and lamb is consistently succulent and tender.

The scheme champions provenance with an independently audited supply chain, which, in turn, provides chefs with reassurances relating to the integrity and quality of the beef and lamb they are purchasing.

Around 50 specialist catering butchers are members of the scheme, along with Michelin starred chefs and current scheme ambassador, Chef Chris Wheeler.

The scheme works in tandem with the West Country PGI scheme for beef and lamb.

The PGI status was awarded in 2014 and it promotes the unique flavour and nutritional benefits associated with grazing the lush flowering meadows in the West Country.
